Blueberry Kiwi Smoothie

As we reach the peak of this week, I remind myself that there are only two more full days of work until Spring Recess. Woohoo! For those of you who are teachers, students, or parents, you know that March is a LONG month. State testing used to occur in March, which allowed teachers to grade and prepare lessons. Now, the state has pushed testing into May, so there are literally no days off in March.


I am absolutely ready for some much needed time off. What do I have planned? Well, I kickstart the weekend with my sister coming to visit from Maine. Sunday is my birthday, my stepsister’s wedding shower, and the premiere of Game of Thrones. On Tuesday, my best friend arrives in New England where we will be cramming at a lot of quality time involving food, hiking, and theater.


Needless-to-say, I’m ready for the fun to begin. Earlier in the week, I prepared all of my meals for lunch. Remember that salsa that I made this weekend? I’ve been enjoying it on top of salads all week! Let me tell you that it hasn’t gotten old yet. In preparation for a weekend of celebratory cocktails and cake, I decided that my weekdaysย would be packed with healthful options. Usually, I do eat a lot of whole foods and very little junk foods, but then there’s wine and cookies and cheese. I digress.


I haven’t made a smoothie in a while, but this one really brightened up my afternoon. I needed something to give me a boost of energy after my long workout and so I called in the fruits and vegetables!


This smoothie is sweet and creamy. It’s loaded with protein and potassium.





Blueberry Kiwi Smoothie


  • 1 frozen banana
  • 1/2 cup frozen blueberries
  • 1/2 cup spinach
  • 1 kiwi (skin removed)
  • 3/4 cup unsweetened almond milk (or milk of your choice)
  • 1/2 scoop vanilla protein powder


  1. Add banana, protein, and almond milk to blender; blend banana and milk on medium-high speed until banana is no longer solid.
  2. Add blueberries, spinach, kiwi to the banana mixture and blend until smooth. This may take a few minutes. Pour into two glasses and enjoy with workout partner or friend!
